The Domaine du Tix "Des Bulles au Cerveau" – which roughly translated means "Bubbles in the Brain.”  It is 100% cinsault which makes for an organic, light pink sparkling wine.  The natural bubbles are generated by spontaneous fermentation without the addition of sulfites through a process called pétillant naturel or “Pet Nat.”  It also has a bottle cap - not a cork or screw top.  And the fun label is a conversation starter.  Great with oysters!
